First Shelia I want to thank you and your son for prayers. I know we will get
through this, but it will only be with God’s help.
I haven’t spoken with my son for just about two weks now. I saw him in the
courtroom but at this time he is unreachable emotionally. I will be going
back to court Feb. 8. I know he is taking his meds because I have spoken to
the nurse in the jail. It is better when he is withdrawn like this to leave
him alone until the meds start working and he starts getting clearheaded
again. It is very hard. I keep swinging between pain and anger.
Anyway…..about my way of eating. I did just buy Bernstien’s book and had
begun reading it when all this started with my son. I can’t concentrate at
the moment so it will have to wait awhile.

I limit my carb intake basically to veggies and salad dressings. I use the
lowest amount of carbs per tbls dresssing I can find….wishbone Berry
Vinegarette…2 carbs per 2tbls. Or I stick with olive oil and vinegar.
I eat alot of veggies, no peas or corn, occasionally I have butternut squash.
I also eat a salad mostly everyday with a small amount of chicken or turkey
in it. I sometimes have lowfat feta cheese instead of meat. I also alternate
between salad and leftover veggies and meat for lunch. But I enjoy the salad
best because I can have as much as I want and not worry about fats and too
much protien.
For breakfast, when I have it, I either have 1 egg omelet with either lowfat
cheese or green peppers. Maybe once a week I will have two fried eggs with 1
slice of pepperidge farms very thin wheat bread. It only has 7 grams per
slice.
For dinner I have a salad, handsize portion of meat, two veggies. Once a week
I allow myself 1/2 baked potato with butter and lowfat sour cream. Every
couple of weeks I treat myself to 2 tbls of rice. It isn’t much because it
shoots my BG up.
I don’t usually snack (except this past week and a half). I have found that I
am not looking for anything in between meals. This is so amazing since I used
to graze from the moment I got up to the moment I went to bed. AND whenever I
got up to go to the bathroom during the night! If I really want a snack I
will have a sugar free jello cup with a squirt of light whipped cream. I
don’t really like anything artificially sweetened but this is very good. I
also recently found Good Humor Fudgsicle pops. One pop has 45 calories and
only 9carbs. I think these are the ones that Jan told me about. I had to ask
our supermarket to special order them for me. Now they carry them all the
time.
As far as milk goes…I never touch it. I do miss a bowl of cereal but milk
is high in carbs. So is cereal.
When I NEED to have pasta….I have 1/3 cup cooked but I saute eggplant,
peppers and mushrooms to add to mine and I enjoy it and don’t miss that huge
bowl of pasta that I ate at least twice a week. I do eat a meatball or
sausage.I even do very nicely without Italian bread, which we had just about
every night. I used to eat salad sandwiches on Italian bread for a snack!
Never miss it now.
When we have company or go to someones house I will have a one or two inch
square piece of cake. But now that I have found the jello, That is what I had
tonight while everyone else had cake for desert.
Since I don’t take medicine that causes lows I can skip breakfast. I usually
do eat breakfast about 3-4 days a week.
I found the cravings for carbs went away within the first 5-7 days. The
inches came off much faster than the pounds. I walk everyday and do aerobics
every other day. I had just started doing weight training, but that I haven’t
been able to concentrate on either this past week and a half. I will
definitely get back to that…I felt so exhilarated after those work outs.
I have lost 54 pounds since August 13 but the amazing thing is that I went
from a size 26 pants to a size 18 and one pair of 16’s!! I wore 26-28 tops,
and now I have one 14-16 and the rest are XL. Of course evrything is loose on
my body…nothing is where God intended it to be…I am sure you know what I
mean! But I am praying that the exercise will help with that. I hope to lose
more weight and more inches.
I am going to send some pictures and you might see the difference.
